Dream of Being in a Cookbook

For many of us who love to cook, being in a published cookbook would be a dream come true.  When I wander through my local bookstore it's hard not to think about it.  If I really want to torture myself I think about that moment when the UPS truck pulls up and the driver hands me a package containing my first printed copy.  Some day....

This last year I had an opportunity to contribute to a book for Good Bite that will be coming out next year.  It was so much fun!  And I must say contributing to a book is just a little bit easier then writing the entire book!  I was ended up writing about 10 recipes for one of the chapters.  Developing and structuring recipes for a printed book can be intense.  You must be exact in your quantities and in your descriptions.  It was a very good experience for me.

If you've had that dream of being in a cookbook, but were a little intimidated then I'd recommend starting out by entering a recipe contest.  A perfect opportunity is Paula Deen's Real Women of Philadelphia contest!  Aside from winning $500 for the best recipe using Philadelphia cream cheese that week, you have a chance at having your recipe included in their upcoming cookbook!  It's a great opportunity for aspiring home cooks who really want to see their name in print.  It's also a great learning experience to put your "editor's hat" on and write the recipes in format fitting to a published cookbook.  It makes you step up your efforts a little bit and really think about how to create the best possible recipe.

In the RWOP contest there are fun themes and recipe categories each week. It's been fun to see all the creative entries from around the country.  However, the contest is ending soon.  If you are interested in submitting your favorite creation... don't delay.  You may end up $500 richer and fulfill that dream of having your culinary creation in print for the world to see!

Anything Goes at Real Women of Philadelphia

During the last few months as I've been watching the Real Women of Philadelphia recipe contest unfold, I've amazed by all the creative entrees. Weekly challenges include themes for entrees, side dishes, appetizers and dessert.  These themes are Time Crunch, Anything Goes, International and Make to Impress.  I usually look forward to the Anything Goes theme. This upcoming week, the winners for the Side Dish theme of "Anything Goes" will be announced.  I thought I was a creative cook, but anytime this theme is applied the competitors are truly thinking outside the box.  And that is what's fun about RWOP. It takes one ingredient (cream cheese) and asks you to think about it differently.  To come up with something unexpected.  To think about things like presentation and photography in addition to the flavors. And to share your efforts with others in a supportive and very engaging community on-line.  

These aren't professional chefs.  The RWOP community is made up of people just like you and me. Just reading some of the entries will inspire creativity. Here are some of my favorite recipes where truly Anything Goes.... I may not follow the exact recipe or even make it at all.  But I was definitely inspired and that is really what counts.



 


Some of these recipes were winners at RWOP and some weren't.  Winners win $500 and a chance to be featured in this Fall's RWOP Cookbook.  And that's pretty cool.  But I think anyone who submits a recipe and tries to do something a little special is a winner too.

Creamy Crab Cup Appetizers

I was asked by Good Bite and Philadelphia cream cheese to share one of my favorite quick appetizers using Philly.  These wonderful little crab cups quickly came to mind. Growing up in Northern California, we consumed a lot of wonderful Dungeness crab!  When I need to make something very quick, I like to make sure to use at least one "star" ingredient like crab.

These are not fancy, but they are quick and tasty for those times when you need to come up with something in a hurry.  You can make the cups in advance and freeze them.  They are nice to have on hand for appetizer inspiration.  You can fill them with just about anything!

Creamy Crab Cup Appetizers
Yield: 24

To Make Bread Cups:

  • 24 slices, fresh thinly-sliced white bread (Inexpensive white bread works much better)
  • 4 TBSP very softened unsalted butter (probably more will be needed - butter is important)

Preheat oven to 400 degrees

For 24 bread cups, you will need a 3-inch plain or fluted cookie-cutter and a 24-cup mini muffin pan. You may also use a small wine glass as a cutter.

Using a pastry brush, generously coat the inside of the tins heavily with the softened butter. If you don’t use enough butter, the cups may be too dry and hard and you want them to be very light and buttery.

Cut a 3-inch round from the slice of bread. You can usually get two rounds per slice. Carefully fit the round into the muffin tins, gently pushing the center of the bread into the “well” of the tin. Very gently, mold it around the bottom of the tin with the tip of your finger or a small wooden pestle. Don’t be rough or the bread will tear. Each bread round should be molded into a perfect little cup.

Place in the oven on the center rack and bake for about 10 minutes, or until lightly browned on the rim and outside of cups. Remove them from the pan and allow to cool.

To Make Crab Filling:

  • 1 lb fresh (or very freshly canned) lump crab meat (blue or Dungeness)
  • 6-8 oz Philly “whipped” cream cheese, softened at room temp
  • 1 celery stalk – finely diced
  • 2-3 green onions, finely diced
  • ¾ tsp sea salt
  • 1 tsp (or more) Old Bay Seasoning
  • Juice from ½ lemon (to taste)
  • ¼ of a red bell pepper, finely sliced into ½ inch spears


Gently fold crabmeat, celery and green onions together with cream cheese in a medium sized bowl. Season with salt, Old Bay and add freshly squeezed lemon juice. Add more seasoning to desired taste.

Using a teaspoon, gently add a dollop of crab filling to each cup. Place sliver of red pepper on each as a garnish. Serve immediately.

As the Real Women of Philadelphia recipe contest continues, I've had the pleasure of getting to know the winning hosts.  Kc Quaretti took time out of her busy day to answer some questions about her self and her experience with RWOP.

1) What is your earliest memory in the kitchen?

I guess you could say my love of cooking started as a VERY young child. I was probably six when I began creating delicious “pancake” meals.  I was not allowed to use expensive ingredients like eggs, butter, sugar, so they consisted of flour and water and maybe a few spices if I could sneak them in without my mom seeing.  Our next door neighbor would gobble them up telling me how wonderful they were!  Knowing now what they must have tasted like, egad my neighbor was nice! Next came an Easy Bake Oven for Christmas, probably because my parents were tired of me wanting them to serve my special pancakes for dinner. Wow, I loved making the little cakes in that tiny oven and thought they tasted better than anything.


2) What is your favorite style/type of food to prepare?


Fresh, seasonal produce is the foundation of anything I make.  I’m a huge farmer’s market fan and searching out the locally grown fruits and veggies is such fun.  When say, beans first come into season, I’ll use them as the center of the meal. Sautéed onions and string beans make a heavenly sauce for pasta when mixed with a little butter or cream cheese and dill or sage.  I marinade a mix of veggies with a bit of olive oil and garlic before grilling.  They are then chopped and used as the topping for pizza; my whole family loves that!  French and Italian are special favorites, but Asian, Spanish, Vietnamese, Indian,  the list of cultures whose cuisine is based on fresh seasonal ingredients in huge and I’m crazy about them all!

 
3) Have you had any funny kitchen or entertaining disasters?


From setting off the smoke alarm because the turkey juices overflowed to singing my bangs the first time I made a flaming dish, I’ve had tons of disasters when entertaining!  Always when there were lots of people around to watch and remember! I think maybe the disasters created the most lasting memories, at least the funniest for sure! 

 
4) Why did you decide to enter in the RWOP contest?


I have had a secret desire for many, many years to host my own cooking show; even made sample shows that my husband videoed many years ago.  So, when I ran across Paula Deens commercial for the Real Women of Philadelphia talent search, I knew right away it was something I had to do.  From week one through the end of week eight, I cooked and chatted while my husband caught it all on video. I am a true example of “Never Give Up” because I was the very last finalist chosen! I will admit that by week six I was pretty sure I was not going to be chosen and thought they weren’t looking for my “type” personality. But, I just had to complete the contest, needed to know that I had done my best from start to finish, so I kept going.  And boy am I glad I did!


5) What was it like to meet Paula and what was your favorite moment with her?


Paula came to greet all the finalists the night we arrived in Savannah and she just blew me away!  She is truly caring and supportive; a person who genuinely wants YOU to succeed. She makes a personal connection with you, talks directly to you and on top of that she is so quick witted and funny.

When she was announcing the winners, Paula talked about never giving up,  then announced my name and walked over to get me.  I have never been more shocked in my life and standing there next to Paula will forever be one of the most important moments in my life!

6) Now that you've won... what is your favorite part of your new roll as a RWOP host?


This is a very hard question to answer; how to choose a favorite?  Getting to chat and cook, all while making videos is a complete delight. I am having such fun making a dessert every day from the recipe submissions and so is my family. But the connections, friendships, the sharing of ideas and support system that come from the RWOP community are amazing, touching and unique!  The RWOP is so much more than an online cooking sight for people who like to cook.  It is an extended family that welcomes everyone with open arms! And I am the luckiest girl around to be allowed to host the dessert weeks!


7) What is your favorite Philly recipe?


I am huge fan of crab cakes! One of my non winning recipes is a family favorite and I am requested to bring it time and time again.

Often times when it is for a meet and greet type get together, I’ll make them bite sized and bring a big them on a big tray with lots of lemon slices.  Usually they are gone within minutes! One nice thing is that these crab cakes don’t have to be piping hot, slightly warm or even room temp they are still tasty and a huge hit!

Meet Paula Deen's Real Women of Philadelphia Winner: Caryn Ross

Two months ago 4 very fortunate women each won $25,000 and the chance to host an incredible nationwide recipe contest for Paula Deen and Philadelphia Cream Cheese.  Their recipes will be in a cookbook featuring recipes with Philly later this year.  During the next couple of months home cooks can visit the RWOP website every week and enter their favorite Philly recipes for a chance to win $500 and a spot in the upcoming book.  A total of $40,000 will be given away during the contest!

It's been quite a ride for these for winners, including "Appetizer Host" Caryn Ross.  Caryn took some time out of her busy schedule to answer a few questions and to share one of her favorite recipes with me.

Caryn, What is your earliest memory in the kitchen?

"My earliest memory is cooking scrambled eggs with my mom.  I believe I was in either 3rd or 4th grade.  My mom encouraged my experimentation in the kitchen.  She taught me that a good cook is one who cleans up too!  So, the clean up was crucial to our agreement that if I was to cook I also must tidy up!  Her encouragement also continued in our travels.  When we traveled she bought me cookbooks and that is how my collection began.  I loved to sit and read my cookbooks and then plan my meals for the week.  We would go to the grocery store on Saturday mornings and buy all the things needed to make amazing meals."

What is your favorite type or style of food to prepare?

"I love all types of cooking.  I'm currently in a Thai mode.  I love creating curries and experimenting with spices in fish and chicken.  I would have to say I'm influenced all the time by what I read, taste and see.  For example, last night I had sweet corn tamales with peppers and cheese.  Today I have been on the internet, then took a trip to a bookstore and finally talked to a chef to figure out how to make these at home.  If I see something that looks amazing, I make it a personal challenge to figure out how to make it.  I'm a very curious cook!"

Have you had any funny kitchen or entertaining disasters?

"Well, I blew a door off a gas oven!  I was in college and cooking dinner for my girlfriends and our dates.  We were at one of the guys house that had an old gas oven.  Our menu included my famous "man-catching" lasagna!  So, I was preheating the oven for the lasagna with the sauce on the stovetop.  Just as I walked out of the room, the gas ignited the build-up in the oven and flung the oven door off its hinges and sent it flying across the room!  The fire department was called and I was introduced to the fact that older gas ovens require their pilot light to be lit each time its used.  We scrapped dinner that night and went out for pizza!"

Why did you decide to enter the Real Women of Philadelphia (RWOP) contest?

"I was inspired because it used cream cheese.  In the Midwest, cream cheese is a food group!  So, when I saw the contest on Paula Deen's website, I thought to myself... "You can do this!"  I got out the tripod and got cooking and taping my videos!  Throughout the contest I have to say I was proud of myself for doing this by myself and for myself!  I believed in me and look where it got me!"

What was it like to meet Paula Deen and do you have a favorite moment with her?

"I loved meeting Paula!  I get asked all the time if she is the same in real life as she appears on TV.  The answer is a resounding YES!  Paula is one of the kindest most genuine ladies around.  She has not let fame get to her.  She loves her family so much and that is very evident in her words and actions.  I loved getting to know her bawdy and silly humor.  We're similar in that respect.  My favorite moment was when she invited us to her home after our final cooking show taping.  She opened it up for all of us to see and gave us a personal tour of everything!!  It was really special.  She is a very gracious woman and I feel so honored to be a guest in her private haven."

Now that you've won... what is your favorite part of your new roll as a RWOP host?

"My favorite part is the interaction with the RWOP community.  I'm amazed by all the recipes and the creativity.  As if that isn't enough, the other part I enjoy is hearing the personal stories behind all the great recipes.  I hear from people all over the country and even received a message from a kind women in Mexico.  It is amazing that a simple blog of Philly cream cheese has brought so many people together!"

What is your favorite recipe using cream cheese?

"I can't pick my absolute #1 favorite since I'm really a fan of so many of the entries.  I will tell you that I recently made Merry Graham's Bratwurst Swirls with Philly Mustard Cream Cheese.  The men in my life loved the bratwurst and I loved that they were surrounded in cream cheese and puffed pastry.  These would be perfect to serve at a football party this fall!"

Paula Deen's Real Women of Philadelphia - Recipe Contest!

Just over two weeks ago, Paula Deen announced the four winners of the Real Women of Philadelphia contest!  After receiving nearly 6,000 video entries from all over the country the choice was tough. There were so many talented ladies all over the country but these four rose to the top! Each of them won $25,000 and will help Paula create a cookbook featuring recipes using Philadelphia Cream Cheese.  What's really exciting is they are going to help facilitate a new recipe contest that you can enter.... but first...meet the new Real Women of Philadelphia!


Mandy Heaston, Side Dish Host
Mandy is from Seattle Washington and loves to cook with her three daughters at home.  Her blog says it all... www.gourmetmomonthego.com Her passion is to figure out ways to make gourmet inspired meals while managing a busy mom's schedule.

Caryn Ross, Appetizer Host
This Oklahoma lady is full of personality and sass!  She and her husband of 17 years love to spend time with their two kids on their boat and have an unbridled love of food and cooking!

KC Quaretti-Lee, Dessert Host
KC lives in sunny Florida and is very active in her community of Venice.  In addition to being an avid volunteer, she's also involved in the redevelopment of her downtown area. She spends her time with her husband and daughter as well as in the kitchen!

Sheila Cutchlow, Entree Host
Sheila is from Washington DC and is very active in addition being a great cook.  Her dream is to switch careers into the culinary world.  I really enjoyed watching her very emotional winning moment that even had Paula in tears!









Enter the Contest!

Here's the fun part! The contest and this fun cooking community is just getting started!  You can submit your own original recipe using Philly Cream Cheese and have the chance to win $500..... not just once.... but one recipe will be chosen each day to win $500!  What's even better is all of the chosen recipes will have a chance to be included in the upcoming Real Women of Philadelphia Cookbook!

Every week for the next 16 weeks... one of the four winning hosts will give you a recipe theme.  This week's theme is Time Crunch - Side Dish.  Your recipe needs to be just right for those moments when you just don't have enough time in the day.  It needs to be prepared in 30 minutes or less with 5 ingredients or less.  You can submit as many recipes as you like!  Just submit them to the website - no need for videos this time!  Be sure to them in before 11;59 pm EST, July 25th.  Visit the RWOP official website for all the details.

It all comes down to this.... 5,000 video entries from talented ladies around the country have been narrowed down 16 finalists.  Those finalists were in a cook-off where Paula Deen and a panel of distinguished judges selected the final four winners and new hosts of the Real Women of Philadelphia!  In addition to each winning $25,000... they will also help create a new cookbook featuring recipes using Philadelphia cream cheese!

Paula Deen's Real Women of Philadelphia

Awhile back I announced an exciting opportunity to become the next big cooking star. Paula Deen teamed up with Philadelphia Cream Cheese on a nationwide search to discover the "Real Women of Philadelphia."  This exciting contest to find four fabulous female home cooks has created quite a stir (no pun intended!) The four very skilled and lucky ladies will each win $25,000 and work with the community to create a special cookbook featuring all of our favorite recipes made with Philly.

So far over 5,000 home cooks have submitted wonderful videos of unique recipes they created using Philadelphia Cream Cheese!  The recipes were divided into 4 categories: appetizers, side dishes, main dishes and desserts.  On the Real Women of Philadelphia website you can view any of the video entries.  I have thoroughly enjoyed watching many of these videos and seeing the creative ways to incorporate the cream cheese in the recipes.  We aren't just talking cheese cake... How about "Blue Peach Pizza?"  You're curious about that one, aren't you?  Or Oatmeal-Apple Cream Pies?  There are so many talented home cooks and they are so comfortable in front of the camera! What is even more impressive to me is the sharing and interaction on the community forum on the site.  Conversations range from cream cheese to cooking to child care. The women are the site are wonderful and warm so check it out and join in the conversation. Paula Deen also contributes her thoughts, recipes and entry highlights on the site.  Now y'all don't want to miss all of the fun!  I couldn't resist throwing in a "y'all...."

They are down to only 16 finalists..... and only four will be crowned the new Hosts of the Real Women of Philadelphia!  The final cook-off to determine the winners is approaching!  On Wednesday, June 30th at 8pm (EST), the Cook-Off event between the 16 finalists will be airing live on the Real Women of Philadelphia website and also here on Laura's Best Recipes!
